Sweet and Sour Glazed Chicken Breasts (Serves 6-8) 4 whole boneless and skinless chicken breasts, cut in half, trimmed of excess fat, flattened to 1/2-inch thickness Salt and freshly ground pepper, to taste 1 tablespoon dried basil leaves, crumbled Glaze: Mix together... 1/2 cup lite soy sauce 1/2 cup ketchup 1/4 cup honey, preferably Golden Blossom brand 1/4 cup vegetable oil, such as safflower or Mazola oil 2 cloves garlic, finely minced Watercress, optional garnish 1. About one hour before baking time, sprinkle salt, pepper, and basil on chicken. Pleace breasts in a single layer in a baking dish, and brush well with some of the Glaze. Let stand for about an hour. Preheat oven to 350 degrees. 2. Baste chicken with remaining Glaze and bake in a preheated oven, uncovered, for about 40 minutes—or until a fork can be inserted in chicken with ease. Baste frequently during baking time. 3. Transfer to a pretty platter and garnish with a generous amount of watercress, if using.
